Food Safety and Allergen Awareness Training, Level 1
This course is based on Food Safety Authority of Ireland Guide to Food Safety Training Levels 1 - Stages 1 & 2
The course outcome will provide learners knowledge of how to handle, store and prepare food in a safe manner and how to maintain a hygienic safe environment.


This course is suitable for all food handlers, catering service staff, kitchen assistants, bar service staff, childcare assistants, retail and healthcare food service staff.

Course Content
Food Safety Legislation

  • What is HACCP

  • Controlling Food Safety Hazards

  • Food Poisoning Prevention

  • Safe Food Handling Procedures – delivery to service

  • Allergens Awareness

  • Personal Hygiene

  • Cleaning

  • Pest Control

  • Recording Information


Assessment: Multipliable Choice Questionnaire


Course Duration: 2.5 to 3 Hours


Certification:  Certification in Food Safety & Allergens Awareness


Maximum no of participants: 15 persons


All course material provided

This course is also used to provide Refresher Training of Food Safety, Hygiene, HACCP and Allergen Awareness.


On-site training is provided on days and times that suit the business and Training Courses are tailored if required.


Food Safety & Hygiene Training Level 2
This programme will provide your staff with all the necessary skills and information provided by The Food Safety Authority of Ireland Training Guide, Level 2. Participants will attain knowledge on the principles of food safety and hygiene practices and how to apply these to their workplace.


This course is suitable for any person directly handling and preparing food within your business, chefs, kitchen staff, food handlers.

  • Food Contamination

  • HACCP Food Delivery and Storage

  • HACCP from Food Preparation to Cooking and Service

  • Personal Hygiene

  • Food Premises and Equipment

Assessment: Written exam


Course duration: 1 day


Certification:  Certification in Food Safety & Hygiene, Level 2


Maximum no of participants: 12 persons


All course material provided

Certification is valid for 5 years.


On-site training is provided on days and times that suit the business and Training Courses are tailored if required.


Level 2 – Primary course in Food Hygiene accredited by the EHAI
